The water smoker, verticle or cylander shaped barbecue smoker uses water to keep your food moist and from drying out. it generally has four levels the bottom being the charcoal (and wood chips for the smoke flavoring in your meat). The next level contains your water pan. The next two levels have your grills so you can smoke a lot of meat. If you want to grill, simply move your charcoal pan up to the third level and use direct heat. You can also get these in electric which means less hassle on maintaing the temperature.
Kettle style barbecue grills are one of the least
expensive used in outdoor barbecuing. You can cook steaks fast by using
the direct heat method or barbecue by using indirect heat. If you want
to smoke a small amount of food simply add moistened wood chips to the
charcoal.
The refrigerator style electric smoker burns chunks of wood or special briquettes that you add to control how much smoke you want. It smokes with cold or hot heat. You get as much or as little smoke as you want and the best part is, it is set and forget.
Offset barbecue smokers produce great results they have
a firebox that opens up directly into the cooking chamber and the smoke
goes out on the other side. If you want to grill you just put the
charcoal under the grate.
Some say that if you have never smoked before you should start with a cheap smoker . Well I've watched people tend the fire on a cheap charcoal smoker and it just is not something I want to do. You can not keep the temperature constant. You are stuck there and if the day turns out not so nice but the invitations are sent, better have a beach umbrella! Frankly beer is just not that tempting on a cool rainy day. I want one I can count on maintaining its temperature for at least 45 minutes. If I had gone the route of cheap first, quality later. I think I would of stopped at the cheap and not continued out of impatience. I know I am not the only impatient barbecue chef out there! So if you like smoked foods think about that when choosing a barbecue smoker. I would not consider any thing under $175.00.
